Ingredients
- 1 small pumpkin, peeled and diced
- 1 onion, chopped
- 2 carrots, sliced

Instructions
- In a large pot, sauté the onion and carrots until they begin to soften.
- Add the diced pumpkin and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the pumpkin is tender.
- Using an immersion blender, puree the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches until smooth.
