Ingredients
- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 cup water
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 3 cups fresh spinach, chopped
- 1 teaspoon ground cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
Instructions
- In a large bowl, combine the flour and salt. Gradually add the water and knead the dough until smooth. Divide the dough into 4 equal portions and let it rest for 15 minutes.
- Meanwhile, heat the olive oil in a pan over medium heat. Add the chopped onion and sauté until translucent. Add the chopped spinach, ground cumin, paprika, salt, and pepper. Cook for 5-7 minutes, stirring occasionally, until the spinach is wilted. Remove from heat and let the filling cool.
- Roll out each portion of the dough into a thin circle. Place a portion of the spinach filling in the center of each circle. Fold the edges of the dough over the filling to create a sealed flatbread.
- Heat a non-stick pan over medium heat. Place the stuffed flatbreads in the pan and cook for 3-4 minutes on each side, or until golden brown and cooked through.
- Remove from the pan and let the flatbreads cool slightly before serving.
