Turkmenistan Spinach Stuffed Flatbread (Turkmenistan Ispanak Dolması)

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup water
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 cups fresh spinach, chopped
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the flour and salt. Gradually add the water and knead the dough until smooth. Divide the dough into 4 equal portions and let it rest for 15 minutes.
  2. Meanwhile, heat the olive oil in a pan over medium heat. Add the chopped onion and sauté until translucent. Add the chopped spinach, ground cumin, paprika, salt, and pepper. Cook for 5-7 minutes, stirring occasionally, until the spinach is wilted. Remove from heat and let the filling cool.
  3. Roll out each portion of the dough into a thin circle. Place a portion of the spinach filling in the center of each circle. Fold the edges of the dough over the filling to create a sealed flatbread.
  4. Heat a non-stick pan over medium heat. Place the stuffed flatbreads in the pan and cook for 3-4 minutes on each side, or until golden brown and cooked through.
  5. Remove from the pan and let the flatbreads cool slightly before serving.
