Turkmenistan Stuffed Zucchini (Turkmenistan Kabak Dolması)

Ingredients

  • 4 medium zucchinis
  • 1 cup ground beef or lamb
  • 1 cup rice
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped
  • Salt to taste
  • 2 cups chicken or vegetable broth

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the zucchinis and scoop out the flesh, leaving a sturdy shell. Chop the zucchini flesh and set aside.
  3. In a large bowl, combine the ground meat, rice, chopped onion, diced tomatoes, minced garlic, paprika, cumin, black pepper, parsley, and salt. Mix well.
  4. Stuff the hollowed zucchinis with the meat and rice mixture.
  5. Place the stuffed zucchinis in a deep pot and pour the chicken or vegetable broth over them.
  6. Cover the pot and cook over medium heat for 1 hour, or until the zucchinis are tender and the filling is cooked through.
  7. Serve the Turkmenistan Kabak Dolması hot, garnished with additional parsley if desired.
