Turkmenistan Yogurt Soup (Turkmenistan Ayran Aşı)

Ingredients

  • 1 cup plain yogurt
  • 4 cups water
  • 1/2 cup rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh dill, chopped

Instructions

  1. In a large pot, combine the water and rice. Bring to a boil, then reduce heat and simmer for 15 minutes.
  2. In a separate bowl, whisk the yogurt until smooth.
  3. Once the rice is partially cooked, add the chopped onion, minced garlic, and butter to the pot. Cook for another 5 minutes.
  4. Gradually add the whisked yogurt to the pot, stirring constantly to prevent curdling.
  5. Season with salt and black pepper, then simmer for an additional 10 minutes.
  6. Stir in the fresh dill and remove from heat.
