Turmeric Rice (nasi Kunyit)

Ingredients

  • 2 cups jasmine rice
  • 1 1/2 cups coconut milk
  • 1 1/2 cups water
  • 1 1/2 teaspoons ground turmeric
  • 1 teaspoon salt

Instructions

  1. Rinse the jasmine rice until the water runs clear, then drain.
  2. In a pot, combine the coconut milk, water, ground turmeric, and salt. Bring to a gentle simmer over medium heat.
  3. Add the rinsed rice to the pot and stir to combine. Cover with a lid and reduce the heat to low. Cook for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
  4. Once cooked, fluff the turmeric rice with a fork and let it sit for a few minutes before serving.
