Turmeric Rice, also known as Nasi Kunyit, is a fragrant and vibrant dish that is a staple in Peranakan cuisine. This dish is made by cooking rice with coconut milk and turmeric, resulting in a beautiful yellow color and a subtly aromatic flavor.
Ingredients
- 2 cups jasmine rice
- 1 1/2 cups coconut milk
- 1 1/2 cups water
- 1 1/2 teaspoons ground turmeric
- 1 teaspoon salt
Instructions
- Rinse the jasmine rice until the water runs clear, then drain.
- In a pot, combine the coconut milk, water, ground turmeric, and salt. Bring to a gentle simmer over medium heat.
- Add the rinsed rice to the pot and stir to combine. Cover with a lid and reduce the heat to low. Cook for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
- Once cooked, fluff the turmeric rice with a fork and let it sit for a few minutes before serving.
