Turnip Soup (ciorbă De Gulii)
Turnip Soup, also known as Ciorbă de gulii, is a traditional Moldovan dish that is both hearty and flavorful. This soup is perfect for cold winter days and is a great way to enjoy the earthy taste of turnips.
Ingredients
- 2 large turnips, peeled and diced
- 1 onion, chopped
- 2 carrots, sliced
- 2 potatoes, diced
- 4 cups vegetable broth
- 1/2 cup sour cream
- 2 tablespoons fresh dill, chopped
- Salt and pepper to taste
Instructions
- In a large pot, sauté the onion in a little oil until translucent.
- Add the turnips, carrots, and potatoes to the pot and cook for 5 minutes.
- Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 25-30 minutes, or until the vegetables are tender.
- Stir in the sour cream and fresh dill. Season with salt and pepper to taste.
- Serve hot and enjoy!
