Turnip Soup (shalgam Sorpa)
Turnip Soup, also known as Shalgam Sorpa, is a traditional dish in Kazakh cuisine that is hearty, flavorful, and perfect for warming up on a cold day.
Ingredients
- 4 medium turnips, peeled and diced
- 1 onion, chopped
- 2 carrots, sliced
- 3 cloves garlic, minced
- 6 cups vegetable broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and garlic, and cook until softened.
- Add the diced turnips and sliced carrots to the pot, and cook for 5 minutes.
- Pour in the vegetable broth, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 25-30 minutes, or until the vegetables are tender.
- Use an immersion blender to blend the soup until smooth. Alternatively, transfer the soup to a blender in batches and blend until smooth.
- Adjust seasoning to taste, and serve hot.
