Ingredients

  • 4 medium turnips, peeled and diced
  • 1 onion, chopped
  • 2 carrots, sliced
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and garlic, and cook until softened.
  3. Add the diced turnips and sliced carrots to the pot, and cook for 5 minutes.
  4. Pour in the vegetable broth, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 25-30 minutes, or until the vegetables are tender.
  5. Use an immersion blender to blend the soup until smooth. Alternatively, transfer the soup to a blender in batches and blend until smooth.
  6. Adjust seasoning to taste, and serve hot.
