Ingredients

  • 12 large mushrooms, stems removed and reserved
  • 1/2 cup Italian sausage, crumbled
  • 1/4 cup onion, finely chopped
  • 1/4 cup sun-dried tomatoes, chopped
  • 1/2 cup breadcrumbs
  • 1/4 cup Parmesan cheese, grated
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Chop the mushroom stems and sauté them with the Italian sausage, onion, and sun-dried tomatoes until the sausage is cooked through.
  3. In a bowl, mix the cooked sausage mixture with breadcrumbs, Parmesan cheese, parsley, and olive oil. Season with salt and pepper.
  4. Stuff each mushroom cap with the filling mixture and place them on a baking sheet.
  5. Bake for 20-25 minutes, or until the mushrooms are tender and the filling is golden brown.
