Ingredients
- 4 cups of stale bread, torn into pieces
- 2 lbs of ripe tomatoes, chopped
- 4 cloves of garlic, minced
- 1/4 cup of extra virgin olive oil
- 1/4 cup of fresh basil, chopped
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the minced garlic and cook until fragrant.
- Add the chopped tomatoes to the pot and cook for 10 minutes, stirring occasionally.
- Add the torn bread pieces to the pot and stir to combine with the tomatoes.
- Pour in enough water to cover the bread and tomatoes. Bring the mixture to a simmer and cook for 20-30 minutes, stirring occasionally, until the bread has broken down and the soup has thickened.
- Stir in the chopped basil and season with salt and pepper to taste.
- Remove the pot from the heat and let the soup rest for a few minutes before serving.
