Tuscan Tomato Soup (pappa Al Pomodoro)

Ingredients

  • 4 cups of stale bread, torn into pieces
  • 2 lbs of ripe tomatoes, chopped
  • 4 cloves of garlic, minced
  • 1/4 cup of extra virgin olive oil
  • 1/4 cup of fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the minced garlic and cook until fragrant.
  2. Add the chopped tomatoes to the pot and cook for 10 minutes, stirring occasionally.
  3. Add the torn bread pieces to the pot and stir to combine with the tomatoes.
  4. Pour in enough water to cover the bread and tomatoes. Bring the mixture to a simmer and cook for 20-30 minutes, stirring occasionally, until the bread has broken down and the soup has thickened.
  5. Stir in the chopped basil and season with salt and pepper to taste.
  6. Remove the pot from the heat and let the soup rest for a few minutes before serving.
