Tuscan White Bean And Roasted Garlic Dip

Ingredients

  • 2 cans (15 oz) white beans, drained and rinsed
  • 1 whole head of garlic
  • 2 tablespoons olive oil
  • 1 teaspoon fresh rosemary, chopped
  • 1/4 teaspoon red pepper flakes
  • Salt and pepper to taste
  • 2 tablespoons lemon juice
  • 2 tablespoons water

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the top off the head of garlic to expose the cloves, drizzle with a little olive oil, wrap in foil, and roast for 30 minutes until soft.
  3. In a food processor, combine the white beans, roasted garlic cloves, olive oil, rosemary, red pepper flakes, salt, pepper, lemon juice, and water. Blend until smooth and creamy.
  4. Transfer the dip to a serving bowl, drizzle with a little extra olive oil, and serve with your choice of bread or vegetables.
