Tuzla Stuffed Eggplant Rolls (Tuzlanske Punjene Patlidžan Rolnice)

Ingredients
- 2 large eggplants
- 1 lb ground beef
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 cup cooked rice
- 1 tsp paprika
- 1/2 tsp cumin
- Salt and pepper to taste
- 2 cups tomato sauce
- 1/2 cup beef or vegetable broth
- 2 tbsp olive oil
- Fresh parsley for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the eggplants lengthwise into thin slices, about 1/4 inch thick.
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and cook until softened.
- Add the ground beef to the skillet and cook until browned. Season with paprika, cumin, salt, and pepper.
- Stir in the cooked rice and remove the skillet from the heat.
- Place a spoonful of the meat mixture onto each eggplant slice and roll it up.
- Place the rolled eggplants in a baking dish, seam side down.
- In a separate bowl, mix the tomato sauce and broth. Pour the mixture over the eggplant rolls.
- Cover the baking dish with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the eggplants are tender.
- Garnish with fresh parsley before serving.
