Tuzla Stuffed Eggplant Rolls (Tuzlanske Punjene Patlidžan Rolnice)

Ingredients

  • 2 large eggplants
  • 1 lb ground beef
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup cooked rice
  • 1 tsp paprika
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • 2 cups tomato sauce
  • 1/2 cup beef or vegetable broth
  • 2 tbsp olive oil
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the eggplants lengthwise into thin slices, about 1/4 inch thick.
  3. In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and cook until softened.
  4. Add the ground beef to the skillet and cook until browned. Season with paprika, cumin, salt, and pepper.
  5. Stir in the cooked rice and remove the skillet from the heat.
  6. Place a spoonful of the meat mixture onto each eggplant slice and roll it up.
  7. Place the rolled eggplants in a baking dish, seam side down.
  8. In a separate bowl, mix the tomato sauce and broth. Pour the mixture over the eggplant rolls.
  9. Cover the baking dish with foil and bake for 30 minutes.
  10. Remove the foil and bake for an additional 15 minutes, or until the eggplants are tender.
  11. Garnish with fresh parsley before serving.
