Tuzla Stuffed Eggplant with Cheese and Spinach (Tuzlanske Punjene Patlidžane sa Sirom i Spanaćem)
Tuzlanske Punjene Patlidžane sa Sirom i Spanaćem, or Tuzla Stuffed Eggplant with Cheese and Spinach, is a delicious Bosnian dish that combines the earthy flavors of eggplant with creamy cheese and nutritious spinach.
Ingredients
- 2 large eggplants
- 200g feta cheese
- 100g fresh spinach
- 2 cloves garlic, minced
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- Cut the eggplants in half lengthwise and scoop out the flesh, leaving about a 1/2-inch shell. Chop the scooped-out flesh and set aside.
- In a pan, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and chopped eggplant flesh, and sauté for 5 minutes.
- Add the fresh spinach to the pan and cook until wilted. Season with salt and pepper to taste.
- Remove the pan from the heat and crumble the feta cheese into the spinach mixture. Stir until well combined.
- Preheat the oven to 375°F (190°C).
- Stuff the eggplant shells with the spinach and cheese mixture.
- Place the stuffed eggplants in a baking dish and drizzle with the remaining olive oil.
- Bake for 25-30 minutes, or until the eggplants are tender and the tops are golden brown.
