Tuzla Stuffed Eggplant with Cheese and Spinach (Tuzlanske Punjene Patlidžane sa Sirom i Spanaćem)

Ingredients

  • 2 large eggplants
  • 200g feta cheese
  • 100g fresh spinach
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Cut the eggplants in half lengthwise and scoop out the flesh, leaving about a 1/2-inch shell. Chop the scooped-out flesh and set aside.
  2. In a pan, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and chopped eggplant flesh, and sauté for 5 minutes.
  3. Add the fresh spinach to the pan and cook until wilted. Season with salt and pepper to taste.
  4. Remove the pan from the heat and crumble the feta cheese into the spinach mixture. Stir until well combined.
  5. Preheat the oven to 375°F (190°C).
  6. Stuff the eggplant shells with the spinach and cheese mixture.
  7. Place the stuffed eggplants in a baking dish and drizzle with the remaining olive oil.
  8. Bake for 25-30 minutes, or until the eggplants are tender and the tops are golden brown.
