Ingredients

  • 2 large eggplants
  • 2 red bell peppers
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon vinegar
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the whole eggplants and red bell peppers on a baking sheet and roast in the oven for 25-30 minutes, or until the skin is charred and the vegetables are soft.
  3. Remove the roasted vegetables from the oven and let them cool. Once cooled, peel off the skin and remove the seeds from the peppers.
  4. Place the roasted eggplant, red bell peppers, and minced garlic in a food processor and blend until smooth.
  5. Transfer the mixture to a bowl and stir in the olive oil, vinegar, paprika, salt, and pepper.
  6. Adjust seasoning to taste and refrigerate for at least 1 hour before serving.
