Tuzlanska Ajvar, also known as Tuzla Eggplant Dip, is a traditional Bosnian dish that is perfect for serving as an appetizer or a side dish. This flavorful dip is made with roasted eggplant, red bell peppers, and a blend of savory spices, creating a delicious and versatile spread.
Ingredients
- 2 large eggplants
- 2 red bell peppers
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon vinegar
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Place the whole eggplants and red bell peppers on a baking sheet and roast in the oven for 25-30 minutes, or until the skin is charred and the vegetables are soft.
- Remove the roasted vegetables from the oven and let them cool. Once cooled, peel off the skin and remove the seeds from the peppers.
- Place the roasted eggplant, red bell peppers, and minced garlic in a food processor and blend until smooth.
- Transfer the mixture to a bowl and stir in the olive oil, vinegar, paprika, salt, and pepper.
- Adjust seasoning to taste and refrigerate for at least 1 hour before serving.
