Ingredients
- 4 large bell peppers
- 1 pound ground beef
- 1 cup cooked rice
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
- 1 can (14 oz) crushed tomatoes
- 1 cup beef broth
- 2 tablespoons olive oil
Instructions
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large bowl, combine the ground beef, cooked rice, onion, garlic, paprika, oregano, salt, and pepper. Mix well.
- Stuff the bell peppers with the beef and rice mixture.
- Heat the olive oil in a large pot over medium heat. Add the stuffed bell peppers and cook for 5 minutes, turning occasionally, until browned on all sides.
- Pour the crushed tomatoes and beef broth over the bell peppers. Cover the pot and simmer for 45 minutes, or until the peppers are tender.
- Serve the stuffed bell peppers hot, with some of the tomato sauce spooned over the top.
