Ingredients
- 1 lb pork belly, thinly sliced
- 2 tbsp vegetable oil
- 1 tbsp ginger, minced
- 2 cloves garlic, minced
- 2 leeks, sliced
- 1/4 cup doubanjiang (broad bean paste)
- 1 tbsp soy sauce
- 1 tbsp Shaoxing wine
- 1 tsp sugar
- 1/2 tsp Sichuan peppercorns
- 1/2 cup water
- 1 red bell pepper, sliced
Instructions
- Boil the pork belly slices in water for 15 minutes, then drain and pat dry.
- Heat vegetable oil in a wok over high heat and stir-fry the pork until crispy. Remove and set aside.
- Stir-fry ginger, garlic, and leeks in the same wok until fragrant.
- Add doubanjiang, soy sauce, Shaoxing wine, sugar, and Sichuan peppercorns. Stir-fry for 2 minutes.
- Return the crispy pork to the wok, add water, and simmer for 10 minutes.
- Add the sliced red bell pepper and stir-fry for an additional 2 minutes.
- Serve hot and enjoy!
