Ingredients

  • 1 lb pork belly, thinly sliced
  • 2 tbsp vegetable oil
  • 1 tbsp ginger, minced
  • 2 cloves garlic, minced
  • 2 leeks, sliced
  • 1/4 cup doubanjiang (broad bean paste)
  • 1 tbsp soy sauce
  • 1 tbsp Shaoxing wine
  • 1 tsp sugar
  • 1/2 tsp Sichuan peppercorns
  • 1/2 cup water
  • 1 red bell pepper, sliced

Instructions

  1. Boil the pork belly slices in water for 15 minutes, then drain and pat dry.
  2. Heat vegetable oil in a wok over high heat and stir-fry the pork until crispy. Remove and set aside.
  3. Stir-fry ginger, garlic, and leeks in the same wok until fragrant.
  4. Add doubanjiang, soy sauce, Shaoxing wine, sugar, and Sichuan peppercorns. Stir-fry for 2 minutes.
  5. Return the crispy pork to the wok, add water, and simmer for 10 minutes.
  6. Add the sliced red bell pepper and stir-fry for an additional 2 minutes.
