Tykva Sup (cossack Pumpkin Soup)
Tykva Sup, also known as Cossack Pumpkin Soup, is a traditional dish from Cossack cuisine that is perfect for the autumn season. This hearty and flavorful soup is made with simple ingredients and is sure to warm you up on a chilly day.
Ingredients
- 1 small pumpkin, peeled and diced
- 1 onion, chopped
- 2 carrots, diced
- 2 potatoes, peeled and diced
- 4 cups vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, sauté the onion, carrots, and potatoes until the onion is translucent.
- Add the diced pumpkin and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the vegetables are tender.
- Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender in batches and blend until smooth.
- Stir in the heavy cream and season with salt and pepper to taste.
- Serve the soup hot, garnished with fresh parsley.
