Tykva Sup (cossack Pumpkin Soup)

Ingredients

  • 1 small pumpkin, peeled and diced
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 potatoes, peeled and diced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, sauté the onion, carrots, and potatoes until the onion is translucent.
  2. Add the diced pumpkin and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the vegetables are tender.
  3. Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender in batches and blend until smooth.
  4. Stir in the heavy cream and season with salt and pepper to taste.
  5. Serve the soup hot, garnished with fresh parsley.
