Ingredients
- 500g cooked potatoes, diced
- 200g cooked beef or pork, diced
- 1 onion, chopped
- 2 tbsp butter
- 4 eggs
- Salt and pepper to taste
Instructions
- Heat the butter in a large skillet over medium heat.
- Add the chopped onion and cook until translucent.
- Add the diced potatoes and meat to the skillet, spreading them out in an even layer.
- Cook for 10-15 minutes, stirring occasionally, until the potatoes and meat are golden and crispy.
- Make 4 wells in the potato mixture and crack an egg into each well.
- Cover the skillet and cook for 5-7 minutes, or until the eggs are cooked to your liking.
- Season with salt and pepper, then serve hot.
