Ingredients

  • 500g cooked potatoes, diced
  • 200g cooked beef or pork, diced
  • 1 onion, chopped
  • 2 tbsp butter
  • 4 eggs
  • Salt and pepper to taste

Instructions

  1. Heat the butter in a large skillet over medium heat.
  2. Add the chopped onion and cook until translucent.
  3. Add the diced potatoes and meat to the skillet, spreading them out in an even layer.
  4. Cook for 10-15 minutes, stirring occasionally, until the potatoes and meat are golden and crispy.
  5. Make 4 wells in the potato mixture and crack an egg into each well.
  6. Cover the skillet and cook for 5-7 minutes, or until the eggs are cooked to your liking.
  7. Season with salt and pepper, then serve hot.
