Tzatziki-stuffed Mini Peppers

Ingredients

  • 20 mini sweet peppers
  • 1 cup Greek yogurt
  • 1/2 cucumber, grated and squeezed to remove excess moisture
  • 2 cloves garlic, minced
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon fresh mint, chopped
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Cut the tops off the mini peppers and remove the seeds.
  2. In a bowl, mix together the Greek yogurt, grated cucumber, minced garlic, chopped dill and mint, lemon juice, salt, and pepper.
  3. Stuff each mini pepper with the tzatziki mixture.
  4. Chill in the refrigerator for at least 30 minutes before serving.
