Tzatziki-stuffed Mini Peppers

Ingredients
- 20 mini sweet peppers
- 1 cup Greek yogurt
- 1/2 cucumber, grated and squeezed to remove excess moisture
- 2 cloves garlic, minced
- 1 tablespoon fresh dill, chopped
- 1 tablespoon fresh mint, chopped
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Cut the tops off the mini peppers and remove the seeds.
- In a bowl, mix together the Greek yogurt, grated cucumber, minced garlic, chopped dill and mint, lemon juice, salt, and pepper.
- Stuff each mini pepper with the tzatziki mixture.
- Chill in the refrigerator for at least 30 minutes before serving.
