Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2 tbsp sugar
  • 1/2 cup mashed ube (purple yam)
  • 1 1/4 cups milk
  • 1 egg
  • 2 tbsp melted butter
  • 1 tsp vanilla extract

Instructions

  1. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
  2. In a separate bowl, mix the mashed ube, milk, egg, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.

  5. Pour 1/4 cup of batter onto the pan for each pancake and cook until bubbles form on the surface.
