Instructions
- In a large bowl, whisk together the flour, baking powder, salt, and sugar.
- In a separate bowl, mix the mashed ube, milk, egg, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Heat a non-stick pan or griddle over medium heat and lightly grease with butter or oil.
- Pour 1/4 cup of batter onto the pan for each pancake and cook until bubbles form on the surface.
- Flip the pancakes and cook for another 1-2 minutes until golden brown.
- Serve the ube pancakes warm with your favorite toppings.
