Ingredients

  • 1 cup grated ube
  • 1 cup water
  • 1 cup granulated sugar

Instructions

  1. In a saucepan, combine the grated ube and water. Bring to a boil and then simmer for 10 minutes.
  2. Strain the mixture to extract the ube liquid.
  3. Return the ube liquid to the saucepan and add the sugar. Cook over medium heat, stirring constantly, until the sugar is completely dissolved and the mixture thickens to a syrup consistency.
  4. Remove from heat and let it cool before transferring to a jar or bottle for storage.
