Uchche Bhaja (stuffed Bitter Melon)

Ingredients

  • 4 small bitter melons
  • 1 cup finely chopped onions
  • 1/2 cup chopped tomatoes
  • 1/2 cup chopped cilantro
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder
  • Salt to taste
  • 3 tablespoons vegetable oil

Instructions

  1. Wash the bitter melons and cut off the ends. Slit them lengthwise and remove the seeds and pith.
  2. Mix the onions, tomatoes, cilantro, turmeric powder, cumin powder, coriander powder, red chili powder, and salt in a bowl to make the stuffing.
  3. Stuff the bitter melons with the prepared mixture.
  4. Heat oil in a pan and place the stuffed bitter melons in the pan.
  5. Cover and cook on low heat for 15-20 minutes, turning occasionally, until the melons are tender and the stuffing is cooked.
  6. Serve hot with rice or flatbread.
