Uchche Bhaja (stuffed Bitter Melon)
Uchche Bhaja, also known as Stuffed Bitter Melon, is a popular dish in Bangladeshi cuisine. This recipe combines the bitterness of the melon with a flavorful stuffing to create a delicious and unique dish.
Ingredients
- 4 small bitter melons
- 1 cup finely chopped onions
- 1/2 cup chopped tomatoes
- 1/2 cup chopped cilantro
- 1 teaspoon turmeric powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1/2 teaspoon red chili powder
- Salt to taste
- 3 tablespoons vegetable oil
Instructions
- Wash the bitter melons and cut off the ends. Slit them lengthwise and remove the seeds and pith.
- Mix the onions, tomatoes, cilantro, turmeric powder, cumin powder, coriander powder, red chili powder, and salt in a bowl to make the stuffing.
- Stuff the bitter melons with the prepared mixture.
- Heat oil in a pan and place the stuffed bitter melons in the pan.
- Cover and cook on low heat for 15-20 minutes, turning occasionally, until the melons are tender and the stuffing is cooked.
- Serve hot with rice or flatbread.
