Ingredients

  • 1 kg large prawns, cleaned and deveined
  • 4 cloves garlic, minced
  • 2 red chilies, finely chopped
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon salt
  • 2 tablespoons vegetable oil
  • 1 tablespoon lime juice
  • 4 lemongrass stalks, bruised
  • 4 kaffir lime leaves

Instructions

  1. In a bowl, mix together garlic, red chilies, turmeric powder, coriander powder, salt, vegetable oil, and lime juice to make the marinade.
  2. Add the prawns to the marinade and coat them evenly. Let them marinate for 15 minutes.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated prawns onto skewers, alternating with lemongrass stalks and kaffir lime leaves.
  5. Grill the prawns for 2-3 minutes on each side, or until they are cooked through and have a nice char.
  6. Remove from the grill and serve hot.
