Ingredients
- 1 kg large prawns, cleaned and deveined
- 4 cloves garlic, minced
- 2 red chilies, finely chopped
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon salt
- 2 tablespoons vegetable oil
- 1 tablespoon lime juice
- 4 lemongrass stalks, bruised
- 4 kaffir lime leaves
Instructions
- In a bowl, mix together garlic, red chilies, turmeric powder, coriander powder, salt, vegetable oil, and lime juice to make the marinade.
- Add the prawns to the marinade and coat them evenly. Let them marinate for 15 minutes.
- Preheat the grill to medium-high heat.
- Thread the marinated prawns onto skewers, alternating with lemongrass stalks and kaffir lime leaves.
- Grill the prawns for 2-3 minutes on each side, or until they are cooked through and have a nice char.
- Remove from the grill and serve hot.
