Ingredients
- 500g shrimp, peeled and deveined
- 4 shallots, finely chopped
- 5 cloves garlic, minced
- 3-4 red chilies, sliced
- 2 tomatoes, diced
- 1 lemongrass stalk, bruised
- 3 kaffir lime leaves
- 1 tsp tamarind paste
- 1 tsp sugar
- 1/2 cup water
- Salt to taste
- Oil for cooking
Instructions
- Heat oil in a wok or large skillet over medium heat. Sauté the shallots, garlic, and chilies until fragrant.
- Add the shrimp and cook until they turn pink and opaque.
- Stir in the tomatoes, lemongrass, kaffir lime leaves, tamarind paste, sugar, and water. Simmer for a few minutes.
- Season with salt to taste and cook until the sauce thickens.
- Serve hot with steamed rice.
