Ingredients

  • 500g shrimp, peeled and deveined
  • 4 shallots, finely chopped
  • 5 cloves garlic, minced
  • 3-4 red chilies, sliced
  • 2 tomatoes, diced
  • 1 lemongrass stalk, bruised
  • 3 kaffir lime leaves
  • 1 tsp tamarind paste
  • 1 tsp sugar
  • 1/2 cup water
  • Salt to taste
  • Oil for cooking

Instructions

  1. Heat oil in a wok or large skillet over medium heat. Sauté the shallots, garlic, and chilies until fragrant.
  2. Add the shrimp and cook until they turn pink and opaque.
  3. Stir in the tomatoes, lemongrass, kaffir lime leaves, tamarind paste, sugar, and water. Simmer for a few minutes.
  4. Season with salt to taste and cook until the sauce thickens.
