Ingredients

  • 3 stalks lemongrass, white part only, finely chopped

  • 1 red chili, thinly sliced
  • 1 teaspoon turmeric powder
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 2 tablespoons vegetable oil
  • 1 cup coconut milk
  • 1 tablespoon lime juice
  • Fresh cilantro for garnish

Instructions

  1. In a bowl, marinate the shrimp with turmeric powder, sugar, and salt. Set aside for 10 minutes.
  2. Heat the vegetable oil in a pan over medium heat. Add the garlic, onion, lemongrass, and red chili. Sauté until fragrant.
  3. Add the marinated shrimp to the pan and cook until they turn pink and opaque.
  4. Pour in the coconut milk and simmer for 5 minutes.
  5. Stir in the lime juice and cook for another 2 minutes.
