Ingredients
- 1 pound large shrimp, peeled and deveined
- 3 stalks lemongrass, white part only, finely chopped
- 3 cloves garlic, minced
- 1 small onion, finely chopped
- 1 red chili, thinly sliced
- 1 teaspoon turmeric powder
- 1 teaspoon sugar
- 1 teaspoon salt
- 2 tablespoons vegetable oil
- 1 cup coconut milk
- 1 tablespoon lime juice
- Fresh cilantro for garnish
Instructions
- In a bowl, marinate the shrimp with turmeric powder, sugar, and salt. Set aside for 10 minutes.
- Heat the vegetable oil in a pan over medium heat. Add the garlic, onion, lemongrass, and red chili. Sauté until fragrant.
- Add the marinated shrimp to the pan and cook until they turn pink and opaque.
- Pour in the coconut milk and simmer for 5 minutes.
- Stir in the lime juice and cook for another 2 minutes.
- Garnish with fresh cilantro and serve hot with steamed rice.
