Udang Tumis Mete (stir-fried Shrimp With Cashew Nuts)

Ingredients

  • 1 pound (450g) large shrimp, peeled and deveined
  • 1 cup (150g) cashew nuts
  • 3 cloves garlic, minced
  • 1 onion, sliced
  • 1 red bell pepper, sliced
  • 2 tablespoons oyster sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 1 teaspoon sesame oil
  • 2 green onions, chopped
  • 2 tablespoons cooking oil
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of cooking oil in a wok or large skillet over high heat.
  2. Add the shrimp and stir-fry for 2-3 minutes until they turn pink. Remove the shrimp from the wok and set aside.
  3. Heat the remaining 1 tablespoon of cooking oil in the same wok.
  4. Add the cashew nuts and stir-fry for 1-2 minutes until they are lightly toasted. Remove the cashew nuts from the wok and set aside.
  5. Lower the heat to medium, add the garlic and onion to the wok, and stir-fry for 1-2 minutes until fragrant.
  6. Add the red bell pepper and continue to stir-fry for another 2 minutes.
  7. Return the cooked shrimp and cashew nuts to the wok.
  8. Add the oyster sauce, soy sauce, sugar, and sesame oil. Stir-fry for another 1-2 minutes until everything is well combined.
  9. Season with salt and pepper to taste.
  10. Garnish with chopped green onions before serving.
