Udmurt Buckwheat Salad (Гречневый салат)

Ingredients

  • 2 cups buckwheat groats
  • 4 cups water
  • 1 cucumber, diced
  • 1 bell pepper, chopped
  • 1 red onion, thinly sliced
  • 1/4 cup fresh dill, chopped
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. Rinse the buckwheat groats under cold water.
  2. In a pot, bring 4 cups of water to a boil and add the rinsed buckwheat groats. Cook for 15 minutes or until the water is absorbed and the buckwheat is tender.
  3. Transfer the cooked buckwheat to a large bowl and let it cool to room temperature.
  4. Add the diced cucumber, chopped bell pepper, sliced red onion, and chopped dill to the bowl with the buckwheat.
  5. In a small bowl, whisk together the olive oil, apple cider vinegar, salt, and pepper. Pour the dressing over the salad and toss to combine.
  6. Refrigerate the salad for at least 30 minutes before serving.
