Ingredients
- 2 cups buckwheat groats
- 4 cups water
- 1 cucumber, diced
- 1 bell pepper, chopped
- 1 red onion, thinly sliced
- 1/4 cup fresh dill, chopped
- 1/4 cup olive oil
- 2 tablespoons apple cider vinegar
- Salt and pepper to taste
Instructions
- Rinse the buckwheat groats under cold water.
- In a pot, bring 4 cups of water to a boil and add the rinsed buckwheat groats. Cook for 15 minutes or until the water is absorbed and the buckwheat is tender.
- Transfer the cooked buckwheat to a large bowl and let it cool to room temperature.
- Add the diced cucumber, chopped bell pepper, sliced red onion, and chopped dill to the bowl with the buckwheat.
- In a small bowl, whisk together the olive oil, apple cider vinegar, salt, and pepper. Pour the dressing over the salad and toss to combine.
- Refrigerate the salad for at least 30 minutes before serving.
