Голубцы (Udmurt Cabbage Rolls) are a traditional dish from Udmurt cuisine, made with cabbage leaves stuffed with a flavorful mixture of ground meat, rice, and spices. This hearty and comforting dish is perfect for a cozy family dinner or a special occasion.
Ingredients
- 1 head of cabbage
- 1 pound ground beef
- 1/2 cup uncooked rice
- 1 onion, finely chopped
- 1 carrot, grated
- 1 can (14 oz) crushed tomatoes
- 1 cup beef broth
- Salt and pepper to taste
Instructions
- Bring a large pot of water to a boil. Carefully remove the outer leaves of the cabbage and blanch them in the boiling water for 2-3 minutes. Remove and set aside to cool.
- In a mixing bowl, combine the ground beef, uncooked rice, chopped onion, grated carrot, salt, and pepper.
- Place a spoonful of the meat mixture onto each cabbage leaf and roll them up, tucking in the sides to create a tight roll.
- In a large pot, arrange the cabbage rolls in a single layer. Pour the crushed tomatoes and beef broth over the rolls. Cover and simmer for 1 hour, or until the cabbage is tender and the filling is cooked through.
- Serve the голубцы hot, with a side of sour cream or a dollop of butter, if desired.
