Udmurt Cabbage Rolls (Голубцы)

Ingredients

  • 1 head of cabbage
  • 1 pound ground beef
  • 1/2 cup uncooked rice
  • 1 onion, finely chopped
  • 1 carrot, grated
  • 1 can (14 oz) crushed tomatoes
  • 1 cup beef broth
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of water to a boil. Carefully remove the outer leaves of the cabbage and blanch them in the boiling water for 2-3 minutes. Remove and set aside to cool.
  2. In a mixing bowl, combine the ground beef, uncooked rice, chopped onion, grated carrot, salt, and pepper.
  3. Place a spoonful of the meat mixture onto each cabbage leaf and roll them up, tucking in the sides to create a tight roll.
  4. In a large pot, arrange the cabbage rolls in a single layer. Pour the crushed tomatoes and beef broth over the rolls. Cover and simmer for 1 hour, or until the cabbage is tender and the filling is cooked through.
  5. Serve the голубцы hot, with a side of sour cream or a dollop of butter, if desired.
