Udmurt Chicken and Mushroom Pie (Курино-грибной пирог)

Ingredients
- 2 cups cooked chicken, shredded
- 1 cup mushrooms, sliced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tablespoon butter
- 1/2 cup sour cream
- 1/2 cup chicken broth
- 1 teaspoon thyme
- Salt and pepper to taste
- 2 sheets puff pastry
- 1 egg, beaten (for egg wash)
Instructions
- In a skillet, melt the butter over medium heat. Add the diced onion and sauté until translucent.
- Add the minced garlic and sliced mushrooms to the skillet. Cook until the mushrooms are tender and any liquid has evaporated.
- Stir in the shredded chicken, sour cream, chicken broth, thyme, salt, and pepper. Simmer for 5 minutes, then remove from heat and let the filling cool.
- Preheat the oven to 375°F (190°C).
- Roll out one sheet of puff pastry and line a pie dish with it. Spoon the cooled chicken and mushroom filling into the pastry-lined dish.
- Roll out the second sheet of puff pastry and place it over the filling. Trim any excess pastry and crimp the edges to seal the pie.
- Brush the top of the pie with the beaten egg to create a golden crust.
- Make a few small slits in the top pastry to allow steam to escape during baking.
- Bake the pie in the preheated oven for 35-40 minutes, or until the pastry is golden brown and the filling is hot and bubbly.
- Remove the pie from the oven and let it cool for a few minutes before slicing and serving.
