Udmurt Chicken and Mushroom Pie (Курино-грибной пирог)

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup mushrooms, sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon butter
  • 1/2 cup sour cream
  • 1/2 cup chicken broth
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 2 sheets puff pastry
  • 1 egg, beaten (for egg wash)

Instructions

  1. In a skillet, melt the butter over medium heat. Add the diced onion and sauté until translucent.
  2. Add the minced garlic and sliced mushrooms to the skillet. Cook until the mushrooms are tender and any liquid has evaporated.
  3. Stir in the shredded chicken, sour cream, chicken broth, thyme, salt, and pepper. Simmer for 5 minutes, then remove from heat and let the filling cool.
  4. Preheat the oven to 375°F (190°C).
  5. Roll out one sheet of puff pastry and line a pie dish with it. Spoon the cooled chicken and mushroom filling into the pastry-lined dish.
  6. Roll out the second sheet of puff pastry and place it over the filling. Trim any excess pastry and crimp the edges to seal the pie.
  7. Brush the top of the pie with the beaten egg to create a golden crust.
  8. Make a few small slits in the top pastry to allow steam to escape during baking.
  9. Bake the pie in the preheated oven for 35-40 minutes, or until the pastry is golden brown and the filling is hot and bubbly.
  10. Remove the pie from the oven and let it cool for a few minutes before slicing and serving.
