Udmurt Chicken and Vegetable Skewers (Куриные овощные шашлыки)

Ingredients

  • 1 large red bell pepper, cut into chunks
  • 1 large green bell pepper, cut into chunks
  • 1 large red onion, cut into chunks
  • 8 cherry tomatoes
  • 1/4 cup (60ml) olive oil
  • 2 tablespoons (30ml) lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon (5g) paprika
  • 1 teaspoon (5g) cumin
  • Salt and pepper to taste

Instructions

  1. In a bowl, whisk together the olive oil, lemon juice, minced garlic, paprika, cumin, salt, and pepper to create the marinade.
  2. Place the chicken cubes in the marinade, cover, and refrigerate for at least 30 minutes.
  3. Preheat a stovetop grill pan over medium-high heat.
  4. Thread the marinated chicken, bell peppers, onion, and cherry tomatoes onto skewers.
