Ingredients
- 1 lb (450g) chicken breast, cut into cubes
- 1 large red bell pepper, cut into chunks
- 1 large green bell pepper, cut into chunks
- 1 large red onion, cut into chunks
- 8 cherry tomatoes
- 1/4 cup (60ml) olive oil
- 2 tablespoons (30ml) lemon juice
- 2 cloves garlic, minced
- 1 teaspoon (5g) paprika
- 1 teaspoon (5g) cumin
- Salt and pepper to taste
Instructions
- In a bowl, whisk together the olive oil, lemon juice, minced garlic, paprika, cumin, salt, and pepper to create the marinade.
- Place the chicken cubes in the marinade, cover, and refrigerate for at least 30 minutes.
- Preheat a stovetop grill pan over medium-high heat.
- Thread the marinated chicken, bell peppers, onion, and cherry tomatoes onto skewers.
- Grill the skewers for about 12-15 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender.
- Remove from the grill and let rest for a few minutes before serving.
