Udmurt Lamb Stew (Бараний рагу)

Ingredients

  • 1.5 kg lamb, cut into chunks
  • 3 large onions, chopped
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 2 garlic cloves, minced
  • 2 bay leaves
  • 1 tsp paprika
  • 1 tsp cumin
  • 1/2 tsp black pepper
  • 4 cups beef broth
  • 2 tbsp vegetable oil
  • Salt to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the lamb chunks and brown them on all sides.
  3. Add the chopped onions and garlic, and cook until the onions are translucent.
  4. Stir in the paprika, cumin, and black pepper, and cook for 2 minutes to release the flavors.
  5. Pour in the beef broth and add the bay leaves. Bring to a boil, then reduce the heat to low and simmer for 1.5 hours, stirring occasionally.
  6. Add the sliced carrots and diced potatoes, and continue to simmer for another 30 minutes, or until the lamb and vegetables are tender.
  7. Season with salt to taste and serve hot.
