Udmurt Lamb Stew (Бараний рагу)
Бараний рагу (Udmurt Lamb Stew) is a traditional dish from Udmurt cuisine, known for its rich and hearty flavors. This stew is made with tender lamb, aromatic vegetables, and fragrant herbs, creating a comforting and satisfying meal.
Ingredients
- 1.5 kg lamb, cut into chunks
- 3 large onions, chopped
- 4 carrots, sliced
- 3 potatoes, diced
- 2 garlic cloves, minced
- 2 bay leaves
- 1 tsp paprika
- 1 tsp cumin
- 1/2 tsp black pepper
- 4 cups beef broth
- 2 tbsp vegetable oil
- Salt to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the lamb chunks and brown them on all sides.
- Add the chopped onions and garlic, and cook until the onions are translucent.
- Stir in the paprika, cumin, and black pepper, and cook for 2 minutes to release the flavors.
- Pour in the beef broth and add the bay leaves. Bring to a boil, then reduce the heat to low and simmer for 1.5 hours, stirring occasionally.
- Add the sliced carrots and diced potatoes, and continue to simmer for another 30 minutes, or until the lamb and vegetables are tender.
- Season with salt to taste and serve hot.
