Udmurt Mushroom and Cheese Soup (Грибной сырный суп)
This traditional Udmurt Mushroom and Cheese Soup is a hearty and comforting dish that is perfect for the colder months. Made with earthy mushrooms and creamy cheese, this soup is sure to warm you up from the inside out.
Ingredients
- 500g mixed mushrooms, sliced
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 1 cup shredded cheese (such as Gouda or Cheddar)
- 2 tablespoons butter
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, melt the butter over medium heat. Add the onions and garlic, and sauté until softened.
- Add the mushrooms to the pot and cook until they release their liquid and start to brown.
- Pour in the vegetable broth and bring the soup to a simmer. Let it cook for 15 minutes.
- Stir in the heavy cream and shredded cheese, and let the soup simmer for an additional 10 minutes.
- Season the soup with salt and pepper to taste.
- Serve the soup hot, garnished with fresh parsley.
