Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cut into cubes
- 3-4 tablespoons ice water
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 pound mushrooms, sliced
- 1 teaspoon thyme
- Salt and pepper to taste
- 1 cup grated cheese (such as Gouda or Cheddar)
- 1/2 cup heavy cream
- 2 eggs
Instructions
- In a food processor, combine the flour and salt. Add the cold butter and pulse until the mixture resembles coarse crumbs.
- Gradually add the ice water, 1 tablespoon at a time, and pulse until the dough comes together.
- Shape the dough into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.
- Preheat the oven to 375°F (190°C).
- Roll out the dough on a floured surface and fit it into a 9-inch tart pan. Trim any excess dough.
- Heat the olive oil in a skillet over medium heat. Add the onion and garlic, and sauté until softened.
- Add the mushrooms and thyme, and cook until the mushrooms are golden and any liquid has evaporated. Season with salt and pepper.
- Sprinkle half of the grated cheese over the tart crust. Spoon the mushroom mixture on top, then sprinkle the remaining cheese.
- In a small bowl, whisk together the heavy cream and eggs. Pour this mixture over the mushrooms and cheese.
- Bake the tart for 35-40 minutes, or until the filling is set and the crust is golden brown.
- Let the tart cool for a few minutes before slicing and serving.
