Udmurt Mushroom and Potato Salad (Грибно-картофельный салат)

Ingredients

  • 500g potatoes, boiled and diced
  • 250g mushrooms, sliced
  • 1 onion, finely chopped
  • 3 tbsp vegetable oil
  • 2 tbsp white wine vinegar
  • Salt and pepper to taste
  • Fresh dill for garnish

Instructions

  1. In a pan, heat 2 tbsp of vegetable oil over medium heat.
  2. Add the chopped onion and sauté until translucent.
  3. Add the sliced mushrooms and cook until they release their moisture and become golden brown.
  4. In a large bowl, combine the diced potatoes and the cooked mushrooms and onions.
  5. In a small bowl, whisk together the remaining 1 tbsp of vegetable oil, white wine vinegar, salt, and pepper.
  6. Pour the dressing over the potato and mushroom mixture and toss gently to combine.
  7. Garnish with fresh dill before serving.
