Ingredients
- 500g mixed mushrooms, sliced
- 1 onion, finely chopped
- 2 carrots, diced
- 2 potatoes, peeled and cubed
- 1 liter vegetable broth
- 2 bay leaves
- 1 teaspoon thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and sauté until translucent.
- Add the sliced mushrooms and cook until they release their juices.
- Add the diced carrots, cubed potatoes, bay leaves, and thyme to the pot.
- Pour in the vegetable broth and bring the soup to a boil.
- Reduce the heat and let the soup simmer for 30 minutes, or until the vegetables are tender.
- Season with salt and pepper to taste.
- Remove the bay leaves and discard.
- Serve the mushroom soup hot, garnished with fresh parsley.
