Udmurt Stuffed Peppers (Фаршированный перец)

Ingredients

  • 4 large bell peppers
  • 1 lb ground beef
  • 1 cup cooked rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tomato, diced
  • 1/2 cup tomato sauce
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley

Instructions

  1. Cut the tops off the bell peppers and remove the seeds and membranes.
  2. In a large bowl, mix together the ground beef, cooked rice, onion, garlic, tomato, tomato sauce, paprika, salt, pepper, and parsley.
  3. Stuff the bell peppers with the meat mixture and place them in a large pot.
  4. Add water to the pot until the peppers are halfway submerged.
  5. Cover the pot and cook the peppers over medium heat for 1 hour, or until the meat is fully cooked and the peppers are tender.
  6. Remove the stuffed peppers from the pot and serve hot.
