Ingredients

  • 8 oz udon noodles
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup snap peas
  • 1 cup sliced shiitake mushrooms
  • 3 green onions, sliced
  • 3 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 1 tsp grated ginger
  • 1/4 tsp red pepper flakes
  • 2 tbsp vegetable oil

Instructions

  1. Boil the udon noodles according to the package instructions. Drain and set aside.
  2. In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, honey, ginger, and red pepper flakes. Set aside.
  3. Heat the vegetable oil in a large wok or skillet over high heat. Add the bell peppers, snap peas, and shiitake mushrooms. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  4. Add the garlic and green onions to the wok and stir-fry for an additional 1-2 minutes.
  5. Add the cooked udon noodles to the wok and pour the sauce over the noodles and vegetables. Toss everything together until well combined and heated through.
  6. Divide the udon stir-fry among serving plates and serve hot.
