Ingredients
- 8 oz udon noodles
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup snap peas
- 1 cup sliced shiitake mushrooms
- 3 green onions, sliced
- 3 cloves garlic, minced
- 1/4 cup soy sauce
- 2 tbsp sesame oil
- 1 tbsp rice vinegar
- 1 tbsp honey
- 1 tsp grated ginger
- 1/4 tsp red pepper flakes
- 2 tbsp vegetable oil
Instructions
- Boil the udon noodles according to the package instructions. Drain and set aside.
- In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, honey, ginger, and red pepper flakes. Set aside.
- Heat the vegetable oil in a large wok or skillet over high heat. Add the bell peppers, snap peas, and shiitake mushrooms. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
- Add the garlic and green onions to the wok and stir-fry for an additional 1-2 minutes.
- Add the cooked udon noodles to the wok and pour the sauce over the noodles and vegetables. Toss everything together until well combined and heated through.
- Divide the udon stir-fry among serving plates and serve hot.
