Udupi Coconut Rice

Ingredients

  • 2 cups basmati rice
  • 1 cup grated coconut
  • 2 tbsp coconut oil
  • 1 tsp mustard seeds
  • 1 tsp urad dal
  • 1 tsp chana dal
  • 2-3 dry red chilies
  • 1/2 inch ginger, finely chopped
  • 8-10 curry leaves
  • Salt to taste
  • 2 cups water

Instructions

  1. Wash the basmati rice and soak it in water for 15-20 minutes.
  2. Grind the grated coconut with a little water to make a coarse paste.
  3. Heat coconut oil in a pan and add mustard seeds, urad dal, chana dal, dry red chilies, ginger, and curry leaves. Sauté until the dals turn golden brown.
  4. Add the ground coconut paste and sauté for 2-3 minutes.
  5. Drain the soaked rice and add it to the pan. Sauté for a minute.
  6. Add water and salt. Stir well and cook until the rice is done.
  7. Once the rice is cooked, fluff it with a fork and serve hot.
