Udupi Coconut Rice
Udupi Coconut Rice is a popular dish from the Dakshina Karnataka Cuisine, known for its unique blend of flavors and aromatic ingredients.
Ingredients
- 2 cups basmati rice
- 1 cup grated coconut
- 2 tbsp coconut oil
- 1 tsp mustard seeds
- 1 tsp urad dal
- 1 tsp chana dal
- 2-3 dry red chilies
- 1/2 inch ginger, finely chopped
- 8-10 curry leaves
- Salt to taste
- 2 cups water
Instructions
- Wash the basmati rice and soak it in water for 15-20 minutes.
- Grind the grated coconut with a little water to make a coarse paste.
- Heat coconut oil in a pan and add mustard seeds, urad dal, chana dal, dry red chilies, ginger, and curry leaves. Sauté until the dals turn golden brown.
- Add the ground coconut paste and sauté for 2-3 minutes.
- Drain the soaked rice and add it to the pan. Sauté for a minute.
- Add water and salt. Stir well and cook until the rice is done.
- Once the rice is cooked, fluff it with a fork and serve hot.
