Udupi Masala Dosa

Ingredients

  • 2 cups rice flour
  • 1/2 cup urad dal (black gram lentils)
  • 3-4 medium potatoes, boiled and mashed
  • 1 onion, finely chopped
  • 2-3 green chilies, finely chopped
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon cumin seeds
  • 1/4 cup fresh coriander leaves, chopped
  • Salt to taste
  • Oil for cooking

Instructions

  1. Rinse urad dal and rice together, then soak in water for 4-5 hours.
  2. Grind the soaked dal and rice into a smooth batter, then ferment overnight.
  3. In a pan, heat oil and add mustard seeds and cumin seeds. Once they splutter, add chopped onions and green chilies. Sauté until onions are translucent.
  4. Add turmeric powder and mashed potatoes. Mix well and cook for 2-3 minutes. Add salt and coriander leaves, then remove from heat.
  5. Heat a non-stick pan, pour a ladleful of dosa batter, and spread it in a circular motion. Drizzle oil on the edges and cook until crispy.
  6. Place a portion of the potato filling in the center of the dosa, fold it, and serve hot.
