Udupi Masala Dosa
Udupi Masala Dosa is a popular South Indian dish that is crispy on the outside and filled with a flavorful potato filling. It is a staple in Dakshina Karnataka Cuisine and is enjoyed as a breakfast or snack.
Ingredients
- 2 cups rice flour
- 1/2 cup urad dal (black gram lentils)
- 3-4 medium potatoes, boiled and mashed
- 1 onion, finely chopped
- 2-3 green chilies, finely chopped
- 1 teaspoon mustard seeds
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon cumin seeds
- 1/4 cup fresh coriander leaves, chopped
- Salt to taste
- Oil for cooking
Instructions
- Rinse urad dal and rice together, then soak in water for 4-5 hours.
- Grind the soaked dal and rice into a smooth batter, then ferment overnight.
- In a pan, heat oil and add mustard seeds and cumin seeds. Once they splutter, add chopped onions and green chilies. Sauté until onions are translucent.
- Add turmeric powder and mashed potatoes. Mix well and cook for 2-3 minutes. Add salt and coriander leaves, then remove from heat.
- Heat a non-stick pan, pour a ladleful of dosa batter, and spread it in a circular motion. Drizzle oil on the edges and cook until crispy.
- Place a portion of the potato filling in the center of the dosa, fold it, and serve hot.
