Udupi Sambar
Udupi Sambar is a traditional South Indian dish that hails from the Dakshina Karnataka Cuisine. It is a flavorful and aromatic lentil-based vegetable stew that is typically served with steamed rice or idli.
Ingredients
- 1 cup toor dal (split pigeon peas)
- 1 small lemon-sized tamarind ball
- 2 cups mixed vegetables (such as drumsticks, carrots, beans, and eggplant)
- 1 onion, chopped
- 2 tomatoes, chopped
- 1/2 teaspoon turmeric powder
- 1 tablespoon sambar powder
- 2-3 green chilies, slit
- 1 sprig curry leaves
- 2 tablespoons oil
- 1 teaspoon mustard seeds
- 1/2 teaspoon fenugreek seeds
- A pinch of asafoetida (hing)
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- Pressure cook the toor dal with 2 cups of water until soft and mushy.
- Soak the tamarind in 1 cup of warm water and extract the juice.
- Cook the mixed vegetables, onions, and tomatoes in a deep pan with 2 cups of water, turmeric powder, and salt until the vegetables are soft.
- Add the tamarind juice, sambar powder, green chilies, and curry leaves. Simmer for 10 minutes.
- Add the cooked dal to the vegetables and mix well. Simmer for another 10 minutes.
- Heat oil in a small pan and add the mustard seeds. When they start to splutter, add the fenugreek seeds and asafoetida. Pour this tempering over the sambar.
- Garnish with fresh coriander leaves and serve hot with rice or idli.
