Ingredients

  • 2 cups cooked uga (coconut crab meat)
  • 2 cups mashed taro
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup coconut cream
  • 1/2 cup bread crumbs
  • 2 eggs, beaten
  • Salt and pepper to taste
  • Oil for deep frying

Instructions

  1. In a large bowl, combine the cooked uga, mashed taro, onion, garlic, and coconut cream. Season with salt and pepper.
  2. Form the mixture into small croquettes, about the size of a golf ball.
  3. Dip each croquette into the beaten eggs, then roll in the bread crumbs until coated.
