Ingredients
- 2 cups cooked uga (coconut crab meat)
- 2 cups mashed taro
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup coconut cream
- 1/2 cup bread crumbs
- 2 eggs, beaten
- Salt and pepper to taste
- Oil for deep frying
Instructions
- In a large bowl, combine the cooked uga, mashed taro, onion, garlic, and coconut cream. Season with salt and pepper.
- Form the mixture into small croquettes, about the size of a golf ball.
- Dip each croquette into the beaten eggs, then roll in the bread crumbs until coated.
- Heat the oil in a deep fryer or heavy-bottomed pot to 350°F (175°C).
- Fry the croquettes in batches for 3-4 minutes, or until golden brown and crispy.
