Ugandan Banana Bread (ekyenda)
Ugandan Banana Bread, also known as Ekyenda, is a delicious and unique twist on the classic banana bread. Made with ripe bananas and a hint of warm spices, this bread is a popular snack or breakfast option in Uganda.
Ingredients
- 3 ripe bananas, mashed
- 1/2 cup sugar
- 1/3 cup butter, melted
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
- In a large bowl, combine the mashed bananas, sugar, melted butter, and vanilla extract.
- Sift in the flour, baking soda, salt, cinnamon, and nutmeg. Stir until just combined.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
