Ingredients

  • 2 cups dried black-eyed peas
  • 1 onion, chopped
  • 3 tomatoes, diced
  • 3 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • 4 cups vegetable broth
  • Salt and pepper to taste

Instructions

  1. Rinse the dried black-eyed peas and soak them in water for at least 4 hours or overnight.
  2. In a large pot, heat some oil over medium heat. Add the chopped onion and sauté until translucent.
  3. Add the diced tomatoes, minced garlic, grated ginger, cumin, paprika, and cayenne pepper. Cook for 5 minutes, stirring occasionally.
  4. Drain the soaked black-eyed peas and add them to the pot. Pour in the vegetable broth and season with salt and pepper.
