Ingredients
- 2 cups dried black-eyed peas
- 1 onion, chopped
- 3 tomatoes, diced
- 3 cloves garlic, minced
- 1 tsp ginger, grated
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- 4 cups vegetable broth
- Salt and pepper to taste
Instructions
- Rinse the dried black-eyed peas and soak them in water for at least 4 hours or overnight.
- In a large pot, heat some oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the diced tomatoes, minced garlic, grated ginger, cumin, paprika, and cayenne pepper. Cook for 5 minutes, stirring occasionally.
- Drain the soaked black-eyed peas and add them to the pot. Pour in the vegetable broth and season with salt and pepper.
- Bring the stew to a boil, then reduce the heat to low and simmer for 1 hour or until the beans are tender.
- Adjust the seasoning if needed and serve the bean stew hot.
