Ugandan Beef Stew (ekyenkobe)

Ingredients
- 2 lbs beef stew meat, cut into cubes
- 2 onions, chopped
- 3 tomatoes, diced
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 2 green bell peppers, sliced
- 2 carrots, sliced
- 3 potatoes, peeled and cubed
- 2 cups beef broth
- 2 tbsp tomato paste
- 2 tbsp vegetable oil
- 1 tsp curry powder
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the onions, garlic, and ginger, and sauté until fragrant.
- Add the beef stew meat to the pot and brown on all sides.
- Stir in the tomato paste, curry powder, paprika, and cayenne pepper, coating the meat and onions.
- Pour in the beef broth and add the diced tomatoes. Bring the stew to a simmer, then cover and cook for 1 hour.
- After 1 hour, add the potatoes, carrots, and green bell peppers to the pot. Continue to simmer, covered, for an additional 45 minutes, or until the beef and vegetables are tender.
- Season the stew with salt and pepper to taste, then serve hot.
