Ugandan Chicken Soup (ekyenkoko)
Ugandan Chicken Soup, also known as Ekyenkoko, is a traditional dish from Uganda that is hearty, flavorful, and perfect for warming up on a chilly day.
Ingredients
- 1 whole chicken, cut into pieces
- 2 onions, chopped
- 3 tomatoes, diced
- 2 carrots, sliced
- 2 potatoes, diced
- 2 garlic cloves, minced
- 1-inch piece of ginger, grated
- 1 teaspoon curry powder
- 1 teaspoon paprika
- 6 cups chicken broth
- Salt and pepper to taste
- 2 tablespoons vegetable oil
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onions, garlic, and ginger. Sauté until the onions are soft and translucent.
- Add the chicken pieces to the pot and brown on all sides.
- Stir in the curry powder and paprika, then add the diced tomatoes. Cook for 5 minutes.
- Pour in the chicken broth and bring the soup to a boil. Reduce the heat and let it simmer for 30 minutes.
- Add the carrots and potatoes to the pot. Simmer for an additional 15 minutes, or until the vegetables are tender.
- Season the soup with salt and pepper to taste.
- Serve the Ugandan Chicken Soup hot and enjoy!
