Ugandan Chicken Soup (ekyenkoko)

Ingredients

  • 1 whole chicken, cut into pieces
  • 2 onions, chopped
  • 3 tomatoes, diced
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 2 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 1 teaspoon curry powder
  • 1 teaspoon paprika
  • 6 cups chicken broth
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onions, garlic, and ginger. Sauté until the onions are soft and translucent.
  3. Add the chicken pieces to the pot and brown on all sides.
  4. Stir in the curry powder and paprika, then add the diced tomatoes. Cook for 5 minutes.
  5. Pour in the chicken broth and bring the soup to a boil. Reduce the heat and let it simmer for 30 minutes.
  6. Add the carrots and potatoes to the pot. Simmer for an additional 15 minutes, or until the vegetables are tender.
  7. Season the soup with salt and pepper to taste.
  8. Serve the Ugandan Chicken Soup hot and enjoy!
