Ingredients

  • 1 whole chicken, cut into pieces
  • 2 onions, finely chopped
  • 3 tomatoes, diced
  • 3 cloves of garlic, minced
  • 1 inch of ginger, grated
  • 2 tablespoons vegetable oil
  • 1 teaspoon curry powder
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 2 cups chicken broth
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the onions, garlic, and ginger, and sauté until the onions are soft and translucent.
  2. Add the chicken pieces to the pot and brown them on all sides.
  3. Stir in the diced tomatoes, curry powder, paprika, cayenne pepper, salt, and pepper. Cook for 5 minutes, stirring occasionally.
  4. Pour in the chicken broth, cover the pot, and simmer for 45-50 minutes, or until the chicken is tender and the sauce has thickened.
  5. Adjust the seasoning if needed, and garnish with fresh cilantro before serving.
