Ugandan Chicken Stew (enkoko)
Ugandan Chicken Stew, also known as Enkoko, is a flavorful and hearty dish that is a staple in Ugandan cuisine. This stew is made with tender chicken pieces, simmered in a rich and aromatic tomato-based sauce, and is traditionally served with rice or Ugali.
Ingredients
- 1 whole chicken, cut into pieces
- 2 onions, finely chopped
- 3 tomatoes, diced
- 3 cloves of garlic, minced
- 1 inch of ginger, grated
- 2 tablespoons vegetable oil
- 1 teaspoon curry powder
- 1 teaspoon paprika
- 1 teaspoon cayenne pepper
- Salt and pepper to taste
- 2 cups chicken broth
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the onions, garlic, and ginger, and sauté until the onions are soft and translucent.
- Add the chicken pieces to the pot and brown them on all sides.
- Stir in the diced tomatoes, curry powder, paprika, cayenne pepper, salt, and pepper. Cook for 5 minutes, stirring occasionally.
- Pour in the chicken broth, cover the pot, and simmer for 45-50 minutes, or until the chicken is tender and the sauce has thickened.
- Adjust the seasoning if needed, and garnish with fresh cilantro before serving.
