Ugandan Chicken Stew With Chapati (ekyenkoko)
Ugandan Chicken Stew with Chapati, also known as Ekyenkoko, is a popular dish in Ugandan cuisine. This hearty stew is packed with flavor and is often served with soft, fluffy chapati to soak up the delicious sauce.
Ingredients
- 1 whole chicken, cut into pieces
- 2 onions, chopped
- 3 tomatoes, diced
- 3 cloves of garlic, minced
- 1 inch of ginger, grated
- 2 green bell peppers, sliced
- 2 cups of chicken broth
- 1 tablespoon of curry powder
- 1 teaspoon of paprika
- Salt and pepper to taste
- 2 cups of all-purpose flour
- 1 cup of warm water
- 1 tablespoon of vegetable oil
Instructions
- Season the chicken pieces with salt, pepper, curry powder, and paprika.
- In a large pot, heat some oil over medium heat and brown the chicken pieces on all sides. Remove and set aside.
- In the same pot, sauté the onions, garlic, and ginger until fragrant.
- Add the diced tomatoes and cook until they start to break down.
- Return the chicken pieces to the pot and pour in the chicken broth. Cover and simmer for 45 minutes, or until the chicken is tender.
- While the stew is simmering, prepare the chapati dough by mixing the flour, warm water, and oil until a smooth dough forms. Divide the dough into balls and roll out into thin circles.
- Heat a skillet over medium heat and cook the chapati for about 1-2 minutes on each side, until golden brown spots appear.
- Serve the Ugandan Chicken Stew with the freshly cooked chapati.
