Ingredients

  • 1 whole chicken, cut into pieces
  • 2 onions, chopped
  • 3 tomatoes, diced
  • 3 cloves of garlic, minced
  • 1 inch of ginger, grated
  • 2 green bell peppers, sliced
  • 2 cups of chicken broth
  • 1 tablespoon of curry powder
  • 1 teaspoon of paprika
  • Salt and pepper to taste
  • 2 cups of all-purpose flour
  • 1 cup of warm water
  • 1 tablespoon of vegetable oil

Instructions

  1. Season the chicken pieces with salt, pepper, curry powder, and paprika.
  2. In a large pot, heat some oil over medium heat and brown the chicken pieces on all sides. Remove and set aside.
  3. In the same pot, sauté the onions, garlic, and ginger until fragrant.
  4. Add the diced tomatoes and cook until they start to break down.
  5. Return the chicken pieces to the pot and pour in the chicken broth. Cover and simmer for 45 minutes, or until the chicken is tender.
  6. While the stew is simmering, prepare the chapati dough by mixing the flour, warm water, and oil until a smooth dough forms. Divide the dough into balls and roll out into thin circles.
  7. Heat a skillet over medium heat and cook the chapati for about 1-2 minutes on each side, until golden brown spots appear.
  8. Serve the Ugandan Chicken Stew with the freshly cooked chapati.
