Ugandan Chicken Stew With Matoke (ekyenkoko)

Ingredients
- 4 chicken thighs, bone-in and skin-on
- 2 ripe plantains (matoke), peeled and sliced
- 1 onion, chopped
- 3 tomatoes, diced
- 3 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 teaspoon curry powder
- 1 teaspoon paprika
- 2 cups chicken broth
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- Season the chicken thighs with salt, pepper, and paprika.
- Heat the vegetable oil in a large pot over medium heat. Add the chicken thighs and brown them on all sides. Remove the chicken from the pot and set aside.
- In the same pot, add the chopped onion, garlic, and ginger. Sauté until the onion is soft and translucent.
- Add the diced tomatoes, curry powder, and a pinch of salt. Cook for 5 minutes, stirring occasionally.
- Return the browned chicken thighs to the pot and add the chicken broth. Bring to a simmer, then cover and cook for 30 minutes.
- Add the sliced plantains to the pot and continue to simmer for an additional 20 minutes, or until the chicken is tender and the plantains are cooked through.
- Adjust the seasoning with salt and pepper, if needed.
- Serve the Ugandan Chicken Stew with Matoke hot, with a side of steamed rice or ugali.
