Ugandan Chicken Stew With Matoke (ekyenkoko)

Ingredients

  • 4 chicken thighs, bone-in and skin-on
  • 2 ripe plantains (matoke), peeled and sliced
  • 1 onion, chopped
  • 3 tomatoes, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 teaspoon curry powder
  • 1 teaspoon paprika
  • 2 cups chicken broth
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. Season the chicken thighs with salt, pepper, and paprika.
  2. Heat the vegetable oil in a large pot over medium heat. Add the chicken thighs and brown them on all sides. Remove the chicken from the pot and set aside.
  3. In the same pot, add the chopped onion, garlic, and ginger. Sauté until the onion is soft and translucent.
  4. Add the diced tomatoes, curry powder, and a pinch of salt. Cook for 5 minutes, stirring occasionally.
  5. Return the browned chicken thighs to the pot and add the chicken broth. Bring to a simmer, then cover and cook for 30 minutes.
  6. Add the sliced plantains to the pot and continue to simmer for an additional 20 minutes, or until the chicken is tender and the plantains are cooked through.
  7. Adjust the seasoning with salt and pepper, if needed.
  8. Serve the Ugandan Chicken Stew with Matoke hot, with a side of steamed rice or ugali.
