Ugandan Chicken Stew With Plantains (ekyenkoko)

Ingredients
- 1 whole chicken, cut into pieces
- 2 ripe plantains, peeled and sliced
- 1 onion, chopped
- 3 tomatoes, diced
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 2 tablespoons tomato paste
- 1 teaspoon curry powder
- 1 teaspoon paprika
- 1 teaspoon cayenne pepper
- 2 cups chicken broth
- Salt and pepper to taste
- 2 tablespoons vegetable oil
Instructions
- Season the chicken pieces with salt and pepper.
- Heat the vegetable oil in a large pot over medium heat. Add the chicken pieces and brown them on all sides. Remove the chicken from the pot and set aside.
- In the same pot, add the chopped onion, garlic, and ginger. Sauté until the onions are soft and translucent.
- Add the diced tomatoes, tomato paste, curry powder, paprika, and cayenne pepper. Cook for a few minutes until the tomatoes break down and the spices are fragrant.
- Return the browned chicken pieces to the pot and pour in the chicken broth. Bring to a simmer, then cover and cook for 30 minutes.
- Add the sliced plantains to the pot and continue to simmer for another 15-20 minutes, or until the chicken is tender and the plantains are cooked through.
- Adjust the seasoning with salt and pepper, if needed.
- Serve the Ugandan Chicken Stew with Plantains hot, accompanied by steamed rice or Ugali.
