Ingredients
- 1 whole chicken, cut into pieces
- 2 onions, chopped
- 3 tomatoes, diced
- 2 bell peppers, sliced
- 3 cloves of garlic, minced
- 1 inch of ginger, grated
- 2 cups of chicken broth
- 1 cup of coconut milk
- 2 tablespoons of vegetable oil
- 1 teaspoon of curry powder
- 1 teaspoon of paprika
- Salt and pepper to taste
- 4 cups of cooked white rice
Instructions
- Heat the vegetable oil in a large pot over medium heat. Add the onions, garlic, and ginger, and sauté until fragrant.
- Add the chicken pieces to the pot and brown on all sides.
- Stir in the tomatoes, bell peppers, curry powder, and paprika. Cook for 5 minutes.
- Pour in the chicken broth and coconut milk. Season with salt and pepper. Cover and simmer for 45 minutes, or until the chicken is tender.
