Ugandan Chicken Stew With Rice (ekyenkoko)

Ingredients

  • 1 whole chicken, cut into pieces
  • 2 onions, chopped
  • 3 tomatoes, diced
  • 2 bell peppers, sliced
  • 3 cloves of garlic, minced
  • 1 inch of ginger, grated
  • 2 cups of chicken broth
  • 1 cup of coconut milk
  • 2 tablespoons of vegetable oil
  • 1 teaspoon of curry powder
  • 1 teaspoon of paprika
  • Salt and pepper to taste
  • 4 cups of cooked white rice

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the onions, garlic, and ginger, and sauté until fragrant.
  2. Add the chicken pieces to the pot and brown on all sides.
  3. Stir in the tomatoes, bell peppers, curry powder, and paprika. Cook for 5 minutes.
