Ingredients

  • 4 chicken thighs, bone-in and skin-on
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 2 large sweet potatoes, peeled and cut into chunks
  • 4 cups chicken broth
  • Salt and pepper to taste

Instructions

  1. Season the chicken thighs with salt and pepper.
  2. Heat the vegetable oil in a large pot over medium heat. Add the chicken thighs and cook until browned on all sides. Remove the chicken from the pot and set aside.
  3. In the same pot, add the chopped onion and garlic. Cook until softened.
  4. Stir in the ground cumin, coriander, and paprika, and cook for another minute to toast the spices.
  5. Add the sweet potatoes and chicken broth to the pot. Bring to a boil, then reduce the heat and simmer for 30 minutes.
  6. Return the chicken thighs to the pot and continue to simmer for another 20-30 minutes, or until the chicken is cooked through and the sweet potatoes are tender.
  7. Adjust the seasoning with salt and pepper, if needed.
